gel (noun, pl. gels) – a jelly- or jam-like substance; usually referring to strongly hydrophilic polysaccharides that can take up large amounts of water and then assume an elastic, strongly viscous consistency; their consistency varies according to the water content, a gel is more stiff than mucilage.
